Be prepared for some lines when visiting @owlschoux - a very popular Michelin Star pastry shop. Various flavors, all made in house and prepared to order. Hence, crispy dough with a moist center, lush whipped cream and thick ganache fillings are just some highlights that make their products stand out. I tried a few flavors and specifically enjoyed the one with strawberry mousse and mocha. Both weren’t overly sweet and refreshing. The fillings were well-balanced and flavorful, I loved the combination of different textures. Definitely a premium spot in HK and the only place I found with French techniques done properly.


前往 @owlschoux 這間超熱門的米芝蓮星級泡芙店要做好排隊的準備。多種口味均為自家製作,且即點即製。其特色在於酥脆的泡芙外皮配上濕潤的內餡,加上濃郁的鮮奶油和厚實的甘納許 (ganache) 內餡。我嘗試了幾種口味,特別喜歡草莓慕斯和摩卡口味。兩者都不會太甜,非常清爽。內餡平衡且香濃,我愛死這種不同層次的口感。絕對是香港的高級甜點店,也是我找到唯一真正做好法式技術的店面。

In recent years, I have also established my own Laboratory to ensure the unification of our product standards and quality, creating our own Hong Kong brand, OWL's.
